On opening day, I had the opportunity to step inside Toledo – Tapas, Steak & Seafood, the new rooftop restaurant perched atop Gran Destino Tower at Disney’s Coronado Springs Resort. The moment you step off the elevator, you’re welcomed into a space that feels elegant, imaginative, and unmistakably Disney.

Toledo draws its inspiration from the flavors of Spain, offering a variety of small plates, steaks, seafood, and craft cocktails. The menu embraces bold ingredients and creative combinations, featuring dishes like charred octopus, Rioja-braised chicken, and a bone-in ribeye served with paprika chimichurri.
From tapas to entrées, each dish presents a balance of flavor and artistry—ideal for sharing or savoring solo. For those seeking something refreshing, the Spanish olive oil cake and sangria selections were among the early standouts.
