The Edison Just Turned Weekend Brunch Into a Disney Springs Event

Weekend brunch has officially arrived at The Edison in Disney Springs.  Launched this weekend (June 2026), the new brunch experience is now available every Saturday and Sunday from 11:30 a.m. to 3:00 p.m. at The Landing.

The Edison already has the setting for it. The dining room feels part power plant, part supper club, and part live entertainment venue. Add brunch, cocktails, and music, and this becomes more than a meal between shopping stops.

It becomes the kind of Disney Springs experience that fits a slower weekend morning.

Brunch With Edison Energy

The Edison has never been subtle, and that works in its favor.  This is not the place for a quiet plate of eggs and coffee. The new brunch menu leans into comfort food, shareable starters, and cocktails that fit the room.

That makes sense for Disney Springs.  You are not rushing to rope drop. You are not trying to beat a Lightning Lane window. This is a different kind of Disney day: a late start, a reservation, live music, and maybe a drink before walking around The Landing.

The Brunch Menu Highlights

The headline dish may be The Early Bird, with buttermilk fried chicken, a Belgian waffle, and cherry pepper maple syrup.  The French Toast takes a bread pudding-style approach with berries and cream, while the Big Ol’ Biscuit Sando stacks a handmade buttermilk biscuit with house sausage, bacon, fried eggs, and cheese.

For the table, Sticky Monkey Bread brings apple-cinnamon brioche pull-apart bread with toffee caramel.  The official menu also adds a few bigger options, including The Brunch Stack burger, Tomato Soup & Gooey Grilled Cheese, New York Strip, and Blackened Salmon.

Shareables Worth Ordering

The shareables may be the easiest way to make brunch feel like a group experience.  The standout is the DB “Clothesline” Candied Bacon, served with maple, black pepper, and sweet-and-spicy pickles.

Other table-friendly options include Classic Deviled Eggs, MD-Style Blue Crab Dip, Electri-Fries, the Monumental Pretzel, and Churrafles with cinnamon-sugar fried waffles, vanilla cream, and dulce de leche.

That is a solid lineup if you want to graze before the main course or build the meal around a few plates for the table.

The Brunch Cocktails

The cocktail list fits The Edison’s personality.

The Piggyback Maple Old-Fashioned is the most on-brand option, made with WhistlePig PiggyBack bourbon, maple syrup, pecan liqueur, black walnut bitters, and a bacon garnish.

The Bloody Mary goes classic brunch with Grey Goose vodka, bacon, blue cheese olive, and gem lettuce.

Mimosas are available with orange, pineapple, grapefruit, or watermelon juice.

The sleeper pick may be the Rubus Shandy, made with raspberry ale, watermelon juice, lemonade, and lemon. For a warm Disney Springs afternoon, that sounds like the one to watch.

This is a smart addition for Disney Springs.  The Edison already had the atmosphere, cocktail program, and entertainment angle. Brunch gives all of that a new weekend purpose.

The menu fits the space: fried chicken and waffles, candied bacon, monkey bread, biscuit sandwiches, Churrafles, and maple old-fashioneds. Nothing about that feels delicate, and that is exactly why it works.

For locals, this is a new reason to visit Disney Springs on the weekend. For resort guests, it is a no-park dining option that feels different from a character breakfast or quick-service stop.  The Edison brunch is not trying to be quiet.  It is trying to be an experience.  And at Disney Springs, that is the point.
